What I’m Reading–Not a Drop to Drink by Mindy McGinnis
This post-apocalyptic novel follows Lynn, a teen who plans out every moment of her day towards simply surviving. Most specifically by protecting her pond, her cherished water source. Because water is no longer a common resource, and people will do just about anything to get it. So Lynn keeps watch on her roof with rifle in hand, ready to do what is necessary if anyone comes too close. But smoke on the horizon and footprints near the house mean that strangers are near. Near enough to discover and desire Lynn’s water.
This book is intense and compelling. Lynn is a strong protagonist but not without faults, and I’ve really enjoyed following her story. The serious tone and impending danger has me anticipating more trouble. Expect a review of this one soon!
What I’m Wearing–Sparkly Earrings from Baublebar
Aren’t these earrings like little drops of water? They are the perfect accessory for dressing up a plain or dark outfit. I love statement earrings because they never get lost in the outfit.
What I’m Eating–Blueberry Oat Muffins
Delicious blueberries with healthy oats–what a combination! This recipe was adapted from the cookbook Weelicious Lunches.
1 1/4 cups all-purpose flour
1 1/4 cups old-fashioned oats
2 tsp baking powder
Pinch of salt
1/2 cup sugar
1/2 cup milk
1 tsp vanilla extract
1/3 cup canola oil
1 cup fresh or frozen blueberries
Preheat the oven to 400 degrees and spray a muffin pan with cooking spray.
In a medium bowl, whisk together the flour, oats, baking powder, salt, and sugar.
In a large bowl, whisk together the milk, egg, vanilla, and oil.
Stir the dry ingredients into the wet ingredients and mix until just combined. Gently fold in berries.
Pour the batter into the muffin cups; bake for 15-20 minutes.
